So, I told you all that Jesse and I are doing this 2-Week Clean Eating Plan. While I’m totally missing bread and desserts (let’s just be honest!), I’m actually surprised at how much I’m enjoying some of the recipes.
One of our favorites so far was this Green Smoothie. I didn’t think the combination of ingredients sounded good, but was surprised how yummy it was! I posted a picture of the smoothie on Instagram and a number of you asked for the recipe, so I wanted to share how we made it:
Clean Eating Banana-Coconut Green Smoothie
- 1 large frozen banana (We love to buy bananas when they are reduced and then stick them in the freezer for smoothies.)
- 4 cups baby spinach, washed and drained (one 5-oz. bag)
- 2 cups coconut water (You could also substitute milk or almond milk.)
- 4 Tablespoons almond butter (You could also substitute peanut butter.)
Put all ingredients in the blender and blend until smooth. Serve immediately. Serves 2.
This is a thinner smoothie. If you like a thicker smoothie, you could add less liquid or more frozen bananas.
Some of our other favorite smoothies:
Orange Cream Smoothie (This one uses frozen oranges and is so refreshing!)
Pick-Me-Up Smoothie (This one has an unexpected ingredient in it that makes it SO good!)
Chocolate Banana Smoothie (This is SO good — even if it’s not the healthiest smoothie ever!)
